Prawn cocktail sandwich topper


 




















Ingredients
·         50g prawn 
·         1 tbsp low-fat mayonnaise
·         tiny squirt tomato purée
·         several Little Gem lettuce leaves
·         some chopped spring onion
·         slices of cucumber
·         sprinkling of dill
·         slice wholegrain seeded bread or rye, or wholegrain pitta, to serve















Method


1.    Stir prawns with mayonnaise and tomato purée. Pile onto the bread or into pitta with lettuce, spring onion, cucumber and dill.
